Zucchini Lasagna

Ingredients:

  • 4 large zucchinis, thinly sliced lengthwise
  • 2 lbs. 90/10 beef
  • 24 oz. pasta sauce, set aside ½ cup to coat bottom of baking dish
  • 24 oz. cottage cheese
  • ½ cup shredded mozzarella cheese
  • 1 egg
  • 1 tsp dried parsley
  • 1 tsp italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper

Directions:

  1. Preheat the oven to 400 degrees.
  2. Add ground meat to a large pan over medium-high heat. Finely break apart while cooking, brown all the way through. Add pasta sauce to pan, reserving ½ cup for later use, stir together and remove from heat.
  3. In a medium bowl, make the cottage cheese mixture by stirring together cottage cheese, egg, salt and pepper.
  4. Spread the reserved ½ cup of pasta sauce on the bottom of a 9 x 13 baking dish. Add zucchini slices on top of the pasta sauce.
  5. Top the zucchini with ½ pasta sauce and ½ cottage cheese mixture, sprinkle parsley and Italian seasoning on top. Top with zucchini and repeat layers one more time, ending with the top layer of zucchini.
  6. Sprinkle parsley and Italian seasoning on top of zucchini and cover with ½ cup of mozzarella cheese.
  7. Bake for 40 - 45 minutes, broiling for the last few minutes to get a nice golden top.
