Zucchini Lasagna

Ingredients:
- 4 large zucchinis, thinly sliced lengthwise
- 2 lbs. 90/10 beef
- 24 oz. pasta sauce, set aside ½ cup to coat bottom of baking dish
- 24 oz. cottage cheese
- ½ cup shredded mozzarella cheese
- 1 egg
- 1 tsp dried parsley
- 1 tsp italian seasoning
- ½ tsp salt
- ¼ tsp black pepper
Directions:
- Preheat the oven to 400 degrees.
- Add ground meat to a large pan over medium-high heat. Finely break apart while cooking, brown all the way through. Add pasta sauce to pan, reserving ½ cup for later use, stir together and remove from heat.
- In a medium bowl, make the cottage cheese mixture by stirring together cottage cheese, egg, salt and pepper.
- Spread the reserved ½ cup of pasta sauce on the bottom of a 9 x 13 baking dish. Add zucchini slices on top of the pasta sauce.
- Top the zucchini with ½ pasta sauce and ½ cottage cheese mixture, sprinkle parsley and Italian seasoning on top. Top with zucchini and repeat layers one more time, ending with the top layer of zucchini.
- Sprinkle parsley and Italian seasoning on top of zucchini and cover with ½ cup of mozzarella cheese.
- Bake for 40 - 45 minutes, broiling for the last few minutes to get a nice golden top.
