Red Beans and Rice

Makes 6 Servings

Nutrition Facts - 406 calories, 26g protein, 20g fat, 32g carbs

Ingredients:

  • 2 tbsp olive oil/avocado oil
  • 1 large green - or - red bell pepper, diced
  • 1 medium yellow - or - red onion, diced
  • 3 celery stalks, diced
  • 6 cloves garlic, minced
  • 14oz Andouille sausage, sliced into 1/2 inch disks and quartered
  • 3 cups chicken broth
  • 2 tsp Italian seasoning / 1 tbsp Creole seasoning
  • 2 cups long grain rice
  • 2 (15oz) cans red kidney beans - keep juices.
  • *Optional 1-2 tbsp hot sauce

Directions:

  1. Place a large skillet over medium-high heat. Add oil.
  2. Once hot, add pepper, onion, and celery. Saute 2-3 minutes.
  3. Add garlic and sausage. Saute another 2-3 minutes.
  4. Add broth, seasonings, and rice, and stir to combine.
  5. Bring to a boil, then reduce to simmer for 15-20 minutes, or until rice is tender.
  6. Add beans and optional hot sauce. Stir to combine and remove from heat.
