Homemade Spanish Rice

Makes 8 Servings

Nutrition Facts - 169 calories, 3g protein, 3g fat, 31g carbs

Ingredients:

  • 1 Tbsp real butter
  • 1 Tbsp extra virgin olive oil
  • 1/2 medium red onion, diced
  • 1/2 large green pepper, diced
  • 1-1/2 cups jasmine rice
  • 2-1/2 cups low sodium organic chicken broth
  • 1 cup chunky medium salsa
  • 1/2 tsp red cayenne pepper
  • *Salt to taste*

Directions:

  1. Butter and oil in pan until melted, add onions and bell pepper - cook until onion becomes slightly translucent.
  2. Add rice. Stir frequently until rice begins to brown. 
  3. Add salsa, broth, and seasonings. Bring to a boil. 
  4. Lower heat, cover, and simmer for approx. 20 mins or until rice is tender.
