Egg Bake Casserole

Makes 8 Servings

Nutrition Facts - 244 calories, 23g protein, 13g fat, 7g carbs

Ingredients:

  • 12 eggs
  • 16 oz ground breakfast sausage, turkey or pork
  • 1 cup cottage cheese
  • ¼ cup milk or milk alternative 
  • 1 cup diced veggies of choice - we typically do onion, green pepper and mushrooms
  • 12 oz hashbrowns - if frozen, thaw first
  • Salt and pepper to taste

Directions:

  1. Preheat the oven to 375 degrees Fahrenheit. 
  2. Prep a 11 x 17 oven-safe casserole dish by spraying with non-stick cooking spray. If you want to make these muffins instead, line 2 - 12 muffin pans with parchment paper muffin cups.
  3. Brown breakfast sausage, breaking up into small pieces as it cooks. Drain grease, if necessary.
  4. Once sausage is cooked through, combine all listed ingredients into a large mixing bowl. When thoroughly combined, pour into the prepared casserole dish.
  5. Bake 45-50 minutes for casserole, or 25-30 minutes for muffins.
