Best Meatballs

Makes Approximately 25 Meatballs
 

Nutrition Facts - 101 calories, 7g protein, 8g fat, 0.3g carbs (per meatball)

Ingredients:

  • 1 lb. ground beef
  • 1 lb. ground pork (can sub ground turkey to reduce fat content)
  • ½ cup fresh shredded parmesan cheese
  • 2 eggs
  • 2 cloves garlic, minced
  • 2 tsp dried parsley
  • Salt and pepper to taste

Directions:

  1. Preheat the oven to 400 F.
  2. Mix together all listed ingredients until well combined.
  3. Prepare a baking sheet lined with aluminum foil and place a cooling rack inside. Spray rack with non-stick cooking spray. This will allow the grease to drip from the meatballs while cooking.
  4. Roll mixture into bite sized meatballs (recipe makes approximately 25 meatballs) and place on a cooling rack.
  5. Bake for 25-30 minutes, until the internal temperature reaches 165 F. You can top with your favorite marinara or eat by themselves. Both are delicious!
