Berry Oatmeal Bake

Ingredients:

  • 2 cups old-fashioned oats
  • ⅔ cup chopped pecans
  • 2 tsp ground cinnamon
  • 1 tsp baking powder
  • ¾ tsp fine-grain sea salt
  • ¼ tsp ground nutmeg
  • 1-¾ cups milk of choice
  • ⅓ cup maple syrup or honey
  • 2 large eggs
  • 2 Tbsp melted unsalted butter
  • 2 tsp vanilla extract
  • 12 oz frozen berries, set aside ½ cup for topping

Directions:

  1. Preheat the oven to 375 degrees Fahrenheit. Grease 7 x 11 baking dish.
  2. In a medium mixing bowl, combine the oats, nuts, cinnamon, baking powder, salt and nutmeg. Whisk to combine thoroughly.
  3. In a smaller mixing bowl, combine milk, maple syrup or honey, egg, melted butter, and vanilla. Whisk until blended. If butter turns to solid on contact with cold ingredients, briefly microwave the bowl until the butter is melted again. 
  4. After setting aside ½ cup of berries, arrange the remaining berries in the bottom of the baking dish. Cover the fruit with the dry oat mixture, then drizzle the wet ingredients over the oats. Gently sift the dish until the milk mixture moves down through the oats and smooth the top of the oat mixture.
  5. Scatter the remaining berries across the top.
  6. Bake for 45-50 minutes, until the top of the bake is golden brown.
