Mashed Potatoes

Makes 6-8 Servings 

Nutrition Facts - 190 calories, 7g protein,1g fat, 41g carbs

Ingredients:

  • 3 lbs. russet or Yukon gold potatoes
  • 1/3 cup plain Greek yogurt or sour cream (I like Good Foods or Daisy brand sour cream)
  • ½ -2/3 cup milk, or milk alternative, use enough to reach desired consistency
  • ½ tsp salt
  • ¼ tsp pepper
  • ½ tsp dried parsley
  • ½ tsp dried chives
  • 1/8 tsp garlic powder
  • 1/8 tsp onion powder

Directions:

  1. Peel and cube potatoes, place them into a large pot and cover with water.
  2. Place the pot over high heat and bring to boil.
  3. Once boiling, reduce heat to simmer and cook until potatoes are tender, about 15 minutes.
  4. Drain potatoes, keeping them in the same pot and add the remaining ingredients.
  5. Using a potato masher, mash until smooth.
  6. Taste and adjust seasonings as needed
