Mashed Potatoes

Makes 6-8 Servings

Ingredients:
- 3 lbs. russet or Yukon gold potatoes
- 1/3 cup plain Greek yogurt or sour cream (I like Good Foods or Daisy brand sour cream)
- ½ -2/3 cup milk, or milk alternative, use enough to reach desired consistency
- ½ tsp salt
- ¼ tsp pepper
- ½ tsp dried parsley
- ½ tsp dried chives
- 1/8 tsp garlic powder
- 1/8 tsp onion powder
Directions:
- Peel and cube potatoes, place them into a large pot and cover with water.
- Place the pot over high heat and bring to boil.
- Once boiling, reduce heat to simmer and cook until potatoes are tender, about 15 minutes.
- Drain potatoes, keeping them in the same pot and add the remaining ingredients.
- Using a potato masher, mash until smooth.
- Taste and adjust seasonings as needed
